We're so excited to welcome Amelia, age 8, to the newsletter with her very first submission! She's sharing her recipe for delicious lemon bars — sweet, tangy and perfect for summer. Give it a try and let us know what you think!
Ingredients:
2 1/3 cups all-purpose flour
3/4 cup of confectioners sugar (plus more for dusting)
Pinch of salt
2 sticks of butter
5 eggs
1 1/2 cups granulated sugar
1 cup of fresh lemon juice
1/2 tablespoon of lemon zest
1/2 teaspoon of vanilla extract
Instructions:
Preheat oven to 350F.
Mix 2 cups of flour, confectioners sugar and salt in a large bowl and whisk. Work in butter by hand until mixture has large clumps.
Press crust mixture into the baking pan lined with parchment paper and butter. Bake crust mixture for 25 minutes.
To make filling combine eggs, granulated sugar, lemon juice, zest, vanilla extract and remaining 1/3 cup of flour in bowl and mix.
Pour mixture into the pan with the warm crust.
Bake bars in the oven for another 25 minutes.
Take bars out of the oven and let them cool. Dust bars with confectioners sugar.
Serve and enjoy!
